Typically farmers and cooperatives decide whether or not they want to send their coffee out to be decaffeinated.  In this case, our green coffee supplier decided to create their own blend to be decaffeinated. 

  "Our house decaf is a multiple-origin blend named in honor of that lovely blue flower       that blooms before sunrise, is vibrant all day and calls it quits by sundown."
