We recommend storing coffee in an airtight container. Putting our bag of coffee in an air-tight storage bag, in the freezer, will keep the coffee fresh for up to 8 weeks for whole bean and up to 6 weeks if already ground.

Well, that’s a tricky question. In theory, certifications like Organic and Fair-Trade are extremely positive and support quality, sustainability, and a better livelihood for the farmers who produce coffee. In practice, however, these certifications are structured in a way that creates many barriers and hoops to jump through – making it extremely difficult (if not totally impossible) for producers to become eligible for certification status. Moreover, these certifications are not necessarily synonymous with better quality and flavor in the cup, or with much more money for the producers. We travel to the source whenever possible, talk to farmers about their practices and bring you the highest quality coffee we can find.
Our coffee is available for purchase at our roastery, on this website, and at the Western Wake Farmers Market. We pride ourselves on freshness, therefore, have chosen not to sell our coffee in grocery stores, where it is likely to sit too long on the shelves and lose freshness.
When we were starting our business, we had a difficult time coming up with a name. Then we watched our (then puppy) yellow lab, Bailey, playing in the mud. When Bailey emerged, she looked like cream in coffee! It’s kind of a play-on-words for us.
We work hard to keep our top sellers in stock. However, supply and demand can both be unpredictable. Occasionally, we run out of certain coffees or they are unavailable from our distributor. We offer approximately 50 varieties of single origin and custom blends. It is simply impossible for us to keep them all freshly roasted all the time. If you are interested in a specific coffee, please order it online or call a day or two ahead of time and we’ll make sure it’s roasted fresh for you!
