The Backstory
A single estate coffee from the eco-mill of Las Lajas, this organic Costa Rica is from the Chacon family farm. An eco-mill is the grower equivalent of a micro-roaster - it is a processing facility that allows the farm to convert the fruit of their coffee trees into green coffee beans ready for roasting. By being vertically integrated, the farm not only keeps more of the profits, they assure quality by avoiding the need to blend their beans with others from the region.
This certified organic is extremely unusual for a Costa Rica - it is processed in the African style, with the full fruit dried in the sun. While risky for the producer, when it's right the result is extraordinary. The resulting cup profile is rich, sweet and heavily fruited. Notes of chocolate, cherry and strawberry dominate.
In addition to being an outstanding filter coffee, this natural microlot also makes an outstanding single-origin espresso (though it is a bright, fruited cup, best taken without milk).
