The Backstory

The King's Daughters Inn (follow link under description to their website) is a magnificent historic restoration in downtown Durham. Inn keepers Colin and Deanna Crossman have executed on their amazing vision, bringing the abandoned structure back to its former 1920's glory. The Inn is situated in an urban park setting, with 17 luxurious rooms and a fully equipped conference center.

When Colin and Deanna asked us to provide coffees for the Inn, we were challenged to come up with a house blend that reflected the elegance of the property, while appealing to a wide range of coffee consumers. The solution took a page from the playbook of our flagship blend, The Old North State, and utilizes a melange preparation - a melange is a mix of roast levels, blended post-roast.

This decaffeinated coffee is produced using a recently introduced natural process, the Mountain Water Decaffeination process. This method utilizes clean, pure water from the glaciers of the highest mountain in Mexico, Pico de Orizaba. Beans are soaked in pure mountain water to remove 99.9% of the caffeine.

In keeping with the values that led the Crossmans to select this naturally decaffeinated coffee, and us, we roast it in our ultra-efficient Revelation roasting system, producing no stack emissions while consuming 94% less energy than conventional roasters. This is another example of Old World craftsmanship meeting New World approaches to a cleaner, less wasteful planet.

The base, medium roast coffee is an elegantly simple island flavor profile, rounded and slightly fruity. The small amount of dark roasts adds intriguing complexity, bringing hints of nuts and chocolate. Destined to be a classic.
